2 tbs. oil
1 tsp. black mustard seed
1 tbs. urad dal
10 oz. package fresh spinach, finely chopped
1 tsp. Sambhar Masaala
1/2 tsp. salt
1/2 c. coconut milk
1/2 c. water
1 recipe Sambhar Masaala
1. In a 2 qt. saucepan, heat the oil over mediu-high heat; add the mustard seed. When it begins to pop, cover the skillet. As soon as the seed finishes popping, add the urad dal and stir-fry for 30 seconds or until golden brown.
2. Stir in the spinach, a handful at a time (if using fresh), and cook until just wilted, 1 to 2 minutes.
3. Add the remaining ingredients and continue cooking, uncovered stirring occasionally, for 3 to 4 minutes to blend the flavors.
